It really sounds like there's something wrong with the gear box - if I understood you correctly.
For example, my 740i really quickly ajust to the way I drive. Since I've kept it below 2.000 rpm for some day's now, it doesn't shift back anymore, even when accelerating.
Maybe a gearbox software update might help.
